The better the tuna the better the whole dish.<br>2 cloves of garlic, finely minced<br>4 anchovy fillets, finely chopped<br>1 birds eye chilli, slit down the length<br>2 tsp capers, if you use capers in vinegar rinse the vinegar off.<br>1 tbsp parsley, finely chopped<br>1 tsp lemon zest<br>2 tbsp lemon juice<br>1\/4 tsp sea salt<br>1\/4 tsp black pepper<\/p>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<p>Bring a large pan of water to the boil with the 2 tsps. of salt. Cook your spaghetti as per the packet time minus 1 minute. Just before draining, scoop out 1 cup pasta cooking water, then drain the pasta.<\/p>\n\n\n\n<p>Towards the end of the pasta is cooking time, in a pan large enough to take the pasta as well, heat the reserved oil from the tuna cans over medium heat. Add the garlic, anchovies and chilli. Cook and stir for a couple of minute. Then remove the chilli.<\/p>\n\n\n\n<p>Add the pasta, capers and some of the reserved pasta water. Toss all the ingredients together well until the pasta is al dente, if it looks too dry add some more water.<\/p>\n\n\n\n<p>Turn off the heat. Add tuna, parsley, lemon zest, juice, salt and pepper.
