{"id":730,"date":"2017-07-26T13:33:52","date_gmt":"2017-07-26T12:33:52","guid":{"rendered":"http:\/\/www.933.me.uk\/wordpress\/?p=730"},"modified":"2026-01-06T15:50:19","modified_gmt":"2026-01-06T15:50:19","slug":"730","status":"publish","type":"post","link":"http:\/\/www.933.me.uk\/wordpress\/2017\/07\/26\/730\/","title":{"rendered":"Pork Tenderloin Wrapped in Prosciutto"},"content":{"rendered":"<p><strong>Ingredients for 4 People<\/strong><\/p>\n<p><strong>Pork Ingredients<\/strong><\/p>\n<ul>\n<li>Pork Tenderloin (about half a large one per person)<\/li>\n<li>Small bunch of fresh basil<\/li>\n<li>2 tbsp freshly grated parmesan cheese<\/li>\n<li>2 tbsp sundried tomato paste<\/li>\n<li>6 slices of prosciutto<\/li>\n<li>1 tbsp olive oil<\/li>\n<li>Sea salt &amp; fresh ground black pepper<\/li>\n<li>Fresh sage leaves<\/li>\n<\/ul>\n<p><strong>Olive Paste Ingredients<\/strong><\/p>\n<ul>\n<li>4oz black olives pitted<\/li>\n<li>4 tbsp extra virgin olive oil<\/li>\n<li>2 cloves garlic<\/li>\n<\/ul>\n<p><strong>Method Olive Paste<\/strong><\/p>\n<p>Place all ingredients in a food processor and process until smooth, if you prefer a coarser paste then chop the olives &amp; garlic then mix with the oil.<\/p>\n<p><strong>Method Pork<\/strong><\/p>\n<p>Mix the cheese &amp; tomato paste together thoroughly<\/p>\n<p>Trim away any excess fat &amp; membrane from the pork fillet, slice the fillet lengthways taking care not cut all the way though.<\/p>\n<p>Open out the pork &amp; season the inside with sea salt &amp; fresh ground black pepper. Put a layer of basil leaves down the centre, spread the cheese\/tomato mixture on top of the basil. Press the pork back together &amp; wrap the prosciutto around the pork overlapping to cover totally. Place on a rack in a roasting pan seam side down and brush well with olive oil. Bake in a pre-heated oven at 190%c\/375%f\/Gas Mark 5 for app 35\/40 mins.
