No Cook Tomato Sauce

This is a great recipe when you have ripe tomatoes, any tomato will do. The quantities in the recipe will depend on how many people you are feeding and there are no hard and fast rules but this is roughly enough for two people.

Ingredients

  • A quantity of fresh ripe tomatoes
  • 4 to 6 anchovy fillets
  • Extra virgin olive oil
  • 1 clove garlic
  • 10 to 12 green olives
  • Bunch of basil
  • salt
  • pepper

Method

  • Cut the tomatoes into small app 2cm pieces and add to a large bowl (the amount of tomatoes will depend on how many people you are feeding).
  • Use a microplane to give you a very finely minced garlic clove and add this to the bowl.
  • Finely chop the anchovies and the olives and add these to the bowl.
  • Add two tablespoons of olive oil and mix well.
  • Season with salt and pepper to taste.
  • Rip up several leaves of basil and give the mixture a good mix, leave covered for at least 30 mins to let the flavours develop.
  • Cook your preferred pasta (mine is Spaghetti) and when cooked add to the bowl, mix all together and serve.
