Mark’s Macaroni Cheese


  • 8 Slices Thick Cut Cooked Ham
  • 8 Fresh Tomatoes
  • 1 Bunch Spring Onions
  • ½ lb Strong Cheddar Cheese
  • 1 Pkt Macaroni
  • 1 Mozzarella Cheese
  • 1 Quantity Cheese Sauce made with half chicken or vegetable stock half milk and strong cheddar

Method and Ingredients for Cheese Sauce

  • 2 Tablespoons Butter
  • 2 Tablespoons Plain Flour
  • 1/2 litre of hot stock
  • 1 pt milk

Melt butter in a pan, add flour stir until combined, add stock slowly stirring all the time, add milk slowly stirring all the time, when thickened add cheese, add more milk if required to make required consistency.

Method for Macaroni Cheese

Cook the macaroni in salted boiling water, make the cheese sauce. Chop the spring onions, cut up the ham and chop up half of the tomatoes.

Put the onions, ham, and chopped tomatoes into a lasagne dish or similar.

Mix in the cooked pasta then pour the cheese sauce over. Slice the rest of the tomatoes and the mozzarella and lay over the top of the sauce tomatoes first, cover with a layer of grated cheddar.

Bake in the oven for app 40 mins until golden and bubbling.
